We eat a lot of broccoli. It's one of the vegetables that we will all eat. Usually. The kids like it plain. I like it with some flavor.
I also love onions, especially caramelized onions so when I saw this recipe recently, I knew it would be a hit.
I did add some garlic as we are big garlic fans as well. I also skipped the cheese that she originally put on it. Nothing against cheese, it's awesome, we just didn't need it with this.
This was a fantastic dinner and I'll be making it again for sure!
Broccoli with Caramelized Onions & Garlic
Adapted from Food Junkie from Texas
2 large onions, sliced
1/2 tbsp. olive oil
1 tbsp. balsamic vinegar
Salt and pepper
2 head of garlic
1 lbs. broccoli
1 tbsp. butter
Add oil to a pan, saute onions until caramelized on medium heat, about 20 minutes. Add vinegar, garlic, butter and broccoli and cook for about 8 minutes until broccoli is steamed. Add salt and pepper to taste.
Total calories = 457 calories
4 servings = 114 calories per serving

ReplyDeletePS - I used Splenda Brown Sugar in the chicken dish I posted today. It tasted just as good :) Most other recipes featured honey, but I liked this one as it has lemon juice for added sweetneass. Enjoy!
